VINIFICATION Harvest in the last week of August. Grapes totally crushed and destemmed, soft pressing. Alcoholic fermentation at a temperature of 17-18 degrees for a total duration of 10 days. Two fermentation techniques, 50% in oxygenation, 50% in reduction. Followed by permanence in concrete tanks with its own fine lees with weekly battonage
COLOR Straw yellow
BOUQUET Delicate feminine tones, with acacia flowers and roses, enchant the nose at the opening. Fruity tones of melon, light banana, white peach and golden apple with hints of aromatic herbs
PAIRINGS Excellent with small shellfish, fried fish, eggs, risotto with vegetables and seafood, fresh and delicate cheeses. Try it with fried squid and shrimp.
TASTE Savory taste, almost salty, fresh, with consistent notes of pear and apple. Of good length. Preserve scratchy strokes
NOTES The company uses simple and eco-sustainable winemaking tools, aimed at limiting human intervention in the environment as much as possible. The cultivation of the vine is favored by two fundamental elements, namely the mildness of the climate and the clayey character of the soil. For Friuli Grave Pinot Grigio DOC only one grape variety is used, Pinot Grigio in purity: it is a botanical variant of Pinot Noir, characterized by a particular coppery color.
