VARIETY 100% Nerello Mascalese
TYPE OF SOIL Volcanic rich in skeleton. Dark soil born from the disintegration of ancient lava flows coming from the volcano.
AGE OF VINES 10 - 15 years
VINIFICATION Vinification of red grapes in white, immediate separation of the must from the skins by soft pressing, yield in must of 50%.
TRAINING SYSTEM Etna bush and spurred cordon
COLOR Light straw yellow color, great clarity.
BOUQUET The nose is fresh and vibrant with splendid notes of tropical fruit and some hints of rosemary.
PAIRINGS It goes well with light first courses, white meats, fresh cheeses and fish, even raw.
TASTE On the palate it is savory and fresh, with a good body that fits perfectly on the acid spine of this white, leaving a pleasant mineral finish in the mouth.
NOTES A very pleasant, fruity and fragrant wine.
AGING Batonage on the noble lees in steel for at least 8 months. Refinement in the bottle for at least 6 months.
