VARIETY Chardonnay, Pinot Nero

VINIFICATION After harvesting and soft pressing, the must from each single parcel is fermented. Only after a few months of maturation we proceed to the creation of the cuvée made up of equal parts of Chardonnay, which guarantees finesse and elegance and Pinot Noir, which gives the assembly character and structure.

COLOR Golden yellow, bright and shining, with slight greenish reflections in the nail; the grain of the perlage is fine and persistent.

BOUQUET The nose offers a range of fragrances ranging from bread crust to vanilla tones, on a background of ripe apple cream, aromatic herbs and dried fruit (almonds, hazelnuts and peanuts)

PAIRINGS To be drunk as an aperitif and worthy actor in an important lunch, or more simply for a special toast.

TASTE The taste is pure cream, full and round in its complexity, where the notes of ripe fruit are found, relaunched on a background of citrus and spices. A fresh and lively wine, but also full and solidly structured, with a very persistent finish.

NOTES There are times when in front of a bottle of wine you have to stand up and applaud. Absolute champion, Trento DOC produced only in great vintages, is obtained from the vinification of Chardonnay and Pinot Nero grapes harvested strictly by hand, with refermentation in the bottle according to the classic method and a permanence on the lees of at least 96 months. The Dégorgement Tardif (disgorgement delayed over time) through the long and continuous lysis of the yeasts allows us to create a product that is the very soul of our territory, combining exceptional complexity and authority with a wise elegance.
