AGE OF VINES 14 years
VINIFICATION Hand harvested in boxes in the first week of September. Fermentation and maceration are partly in steel and partly in new 500 l tonneaux, first, second, third and fourth passage.

COLOR Golden yellow color with greenish reflections.
BOUQUET The olfactory kit presents floral notes of broom and jasmine together with fruity accents of apricot, exotic fruits, grapefruit and balsamic notes
PAIRINGS Fish-based soups, seafood, pasta with fish sauces, white meats, shellfish, and tuna tartare. Try it with turbot with baked potatoes
TASTE On the palate it is smooth and of good thickness, it has an excellent acid-savory balance that remains until the aftertaste with fruity and great freshness hints and a marked mineral trail
NOTES Fiano, a vine of Campania origin, has an undisputed success in the central-southern part of Italy: here La Valentina successfully vinifies this grape, creating a wine of high quality. An intense, complex, fairly structured wine of great impact. the first totally organic certified wine from the Fattoria La Valentina winery and is very balanced. It is a wine that emerges and is characterized by aromas and a strong sapidity; intense and harmonious in all its multifaceted facets.
AGING 6 months on the lees, partly in steel and partly in tonneaux, of which 20% is new. In the bottle in July.
