VINIFICATION After harvesting, the grapes are de-stemmed and crushed. In the steel barrels, the process of maceration on the skins begins, spontaneous fermentation with indigenous yeasts and temperature control that varies from year to year according to the grapes.

COLOR Light yellow with golden shades.

BOUQUET Aromas of Mediterranean scrub.

PAIRING It is perfect with a cut of beef with porcini mushrooms, roast-grilled meat, stewed red meat, game. Risotto with "Tabor" cheese aged in Karst caves.

TASTE Rich and full taste with distinctly fruity notes and strong mineral traces.

NOTES The Malvasja di Castello di Rubbia has a marked minerality and a dry and clean sip. The grapes are harvested by hand and undergo a maceration of about twenty days in which the polyphenols of the aromatic vine give the wine the complexity and richness that we then savor in the glass. The wine ages 12-18 months "sur lie" (on the yeasts) and carries out the malolactic fermentation. An Istrian Malvasia different from the usual ones, with a strong tone and a peculiar intensity. Very clear-cut, sure. A truly characterful wine. Straw yellow tending to golden, scents of Mediterranean scrub. Dry and full-bodied sip, intensely fruity, with incisive mineral hints. Pairing: excellent as an aperitif, with truffle tagliatelle. It naturally goes well with marinating, dips and first courses.

AGING The wine matures on the lees for 12-18 months; during this period there are two natural physical processes: fermentation and stabilization of lactic acid. The wine is bottled after three years without filtering. Taking into account the natural aging process of the wine, we sometimes choose to mature in old Slavic oak barrels; the wine is bottled two years later without filtering, then aged in the bottle for at least a year.
