Our Cerasuolo d'Abruzzo comes from the traditional R7 clone of Montepulciano. The name of the wine is linked to its color: it derives in fact from the "cerasumà" which means cherry. This is obtained through a medium-long process of cryopreservation, during which the contact between the must and the skins gives the wine the bright cherry color.

Il mostocotto è un prodotto tipico della tradizione casalinga abruzzese. Esso è presente nelle nostre case sin dal tempo degli antichi romani i quali utilizzavano questo liquido denso per addolcire e arricchire il sapore dei cibi oltre che, aggiunto all’acqua, per ottenere una bevanda dissetante ed energetica. Nelle opere degli scrittori latini Apicio, Catone, Columella e del poeta Ovidio, nato a Sulmona, si trovano testimonianze dell’uso del Mostocotto. Attualmente viene utilizzato come ingrediente nell’impasto di vari dolci tradizionali locali. Il mostocotto Praesidium è un succo dolce e denso, ottenuto durante il periodo della vendemmia facendo bollire, a fiamma diretta e moderata per 12-16 ore, il mosto fiore, proveniente al 100% da uve selezionate Montepulciano d’Abruzzo. La lavorazione è lunga e delicata al punto che da 10 litri di mosto se ne ricavano circa 2 di mostocotto Praesidium. Il mostocotto non contiene alcool. Può essere accompagnato a formaggi molto stagionati o ricotta, bollito misto o verdure grigliate. Può essere usato per farcire dolci e macedonia di frutta o, nel modo più tradizionale, come ingrediente nell’impasto di dolci locali abruzzesi. Arricchisce il sapore delle pere al forno

La vendemmia delle uve trebbiano e sauvignon è tardiva e si realizza in più tempi, scegliendo grappoli o parte di essi maggiormente attaccati dalla muffa nobile. Le uve raccolte, molto ricche di zuccheri vengono pigiate in modo soffice ed il mosto ottenuto viene fatto fermentare in serbatoi di acciaio inox. Dopo la fermentazione il vino viene travasato in carati di rovere francese da 225 litri dove rimane circa 12-14 mesi. Si presenta di colore dorato che assume riflessi più intensi, più carichi col passare degli anni ed ha un profumo intenso dal bouquet di miele, fiori e vaniglia. Al palato è dolce e pieno, di buon corpo e giusto equilibrio tra acidità, alcol e zuccheri.

The organic Montepilciano d'Abruzzo is harvested from 100% Montepulciano vines, its alcohol content is 13.5 %vol . It has a deep ruby red color. Rich and fragrant with notes of violets, red berries and liquorice typical of the grape. Alcoholic fermentation takes place by maceration with the skin in stainless steel tanks for 10 days at a temperature of 20-25 degrees. This wine is excellent paired with pasta dishes, soups, grilled fish, roasted white meat, tripe, pizza and semi-aged cheeses.
