The cooked wine has an authentic taste and is rich in aromas. It comes from Montepulciano grapes, reduced by more than 70% with a boiling process, mixed according to ancient recipes with the flower must, aged 10 years in wooden barrels.
Obtained from “muscat” aromatic quality grape juice, this sparkling wine aims to obtain the best balance between the varietal characteristics of the grape, the fruity aromas and the pleasantness of the residual sugar.
This wine has the sun inside. It reflects it in its intense yellow color and in the aromas that smell of midsummer. It is the result of careful care in the countryside. For this wine we select only the best grapes from our vineyards in the mild and sunny areas of Lake Garda.
The Quid Aroma Spumante Dolce best embodies the typical characteristics of its denomination of origin. Soft and with delicate bubbles, it amazes with its aromatic and fruity style with which it perfectly accompanies raw seafood.
After drying, the grapes are pressed and the must obtained, after a first racking, is left to ferment with the use of special selected yeasts . The must ferments at a low temperature, about 15 °, until it has developed about 12 degrees of alcohol. Subsequently, the cleaned and filtered wine is placed in barriques for refinement, during which there is a slight fermentation recovery. Refinement lasts approximately 18 months . After this period the wine was filtered and bottled to be further refined in the bottle for about 6 months .
