TYPE Red Terre Siciliane IGT
PRODUCTION AREA Pachino (Syracuse), in Val di Noto
VARIETY 100% Nero d'Avola
TYPE OF SOIL Very variable, from clayey black to calcareous white to sandy red
VINIFICATION The grapes, harvested in the first half of September, are vinified in red with long maceration of the must with the skins
GROWING SYSTEM Alberello
COLOR Intense ruby red with violet reflections
BOUQUET Complex, intense with aromas of red fruit, blackberry and hints of vanilla
PAIRINGS It goes well with red meats, game and aged cheeses
TASTE On the palate it is elegant, fruity, harmonious, persistent to the taste. It benefits from a long stay in the bottle, becoming more austere and mature
NOTES It is a cru that surprises year after year, always. Never equal to itself and with unexpected complexity and finesse. Powerful but elegant, fat but soft, in short, a wine of opposites. The old and proud vines of this vineyard, in the Bufaleffi district, have their roots in a land composed of different soils. A rainbow of colors from pure limestone to red earths that suddenly turn black and repeat and exchange - and geologies that generate a complexity of unique and intense flavors and olfactory nuances. This vineyard is thought to be within an old caldera, which would also explain the black sands found underground
AGING After malolactic fermentation, the wine is decanted into small 500-barrel barrels where it remains for about two years. Refinement in the bottle for at least one year
