VINIFICATION At the end of a slow maceration at a controlled temperature, punctuated by cycles of pumping over and punching down, the wine is placed in steel tanks so that the malo-lactic fermentation takes place by spring

TASTE In the mouth it appears fresh and harmonious, with a good body. Excellent drinking wine.

NOTES Grumello, from the Latin Grumus, hill, ridge, affects the municipalities of Sondrio and Montagna in Valtellina. It covers an area of just under 100 hectares which finds its center of gravity in Castel Grumello.The particular verticality of this area means that vineyards are already found at 350 m asl up to 650 m asl in the highest part called Dossi Salted. It is widely believed that the wines of this area are particularly fresh and fruity.

AGING Once the fermentation is complete, the wine ages for about eighteen months in Slavonian oak barrels. Of fundamental importance is the subsequent refinement in the bottle, which takes place in dark and cool cellars for at least nine months before being marketed.
