AGE OF VINES 25 years
VINIFICATION Manual harvest, in boxes, following the different ripening periods, during the month of September. The grapes, de-stemmed and crushed, ferment in steel tanks at a controlled temperature of 24-26 degrees. The frequent and short pumping over during the first third of the alcoholic fermentation is then suspended, continuing with maceration of 7-10 days at a temperature of about 28-30 degrees. Malolactic fermentation and aging in French oak barrels follow.

COLOR Intense ruby red
BOUQUET The nose expresses aromas of great amplitude that change allowing the wine to oxygenate in the glass: first notes of blackberry and black cherry, then structured tertiary hints of sweet spices, tobacco, coffee.
PAIRINGS Grilled red meats, fur game, spicy aged pecorino
TASTE In the mouth the fresh acidity and well-rounded tannins from the aging in wood frame a spherical wine, sometimes bony, making it the ideal protagonist of convivial tables, or at the end of the meal.
NOTES The Solideo is obtained from the oldest vineyards, with exposure ranging from south-west to south-east, on mineral soils rich in skeleton.The limited load of grapes per plant, the achievement of perfect ripeness, allows to develop a heritage polyphenolic able to express a wine of great perspective.
