EXPOSURE North-West COMPOSITION OF THE SOIL Of glacial origin: gravelly morainic with the presence of limestone and clay with an airy and permeable substrate. VINEYARDS Merlot AVERAGE AGE OF VINES 15/25 years TRAINING SYSTEM Casarsa and Guyot VINIFICATION The grapes are usually harvested between the last week of September and the first of October, after crushing and destemming they are left to macerate for a rather long period with frequent pumping over for extraction of color and characteristic varietal aromas. After racking, the fermentation is completed followed by the various rackings. The wine is left to mature for a few months in steel barrels before being bottled. AGING After the vinification it remains a few months in steel. TASTING NOTES Color : Lively, brilliant and deep ruby red. Bouquet : Clean and direct with pleasant notes of small fresh red fruits. Taste : Typical varietal with tannins present but refined, harmonious and elegant. PAIRINGS It goes perfectly with pasta with meat sauce, pies, raw or boiled meats. SERVING TEMPERATURE 18 - 19 ° C
