Description

Grapes Black berried. Production area Rosciano, Tenuta Sant'Andrea. Type of soils Exposed to the south, very clayey from which grapes rich in extracts and sugars are obtained. Organoleptic characteristics Amber color, of considerable aromatic complexity, with a marked caramel taste. Process technique Reduction of fresh must over direct heat in a stainless steel boiler, to a third of 100 through the evaporation of water in order to achieve a perfect caramelization of the must which, after cooling, is brought back to 100 with fresh must and fermented in small barrels at a controlled temperature. Finally, the long aging for at least 10 years. Alcohol content 14% vol
