Elegant and full-bodied red wine, obtained from a careful selection of Corvina and Merlot grapes, both coming from the Valpolicella area and the nearby hinterland. A balanced wine characterized by the elegance of Corvina and the structure of Merlot.

Description
Grapes : 50% Corvina and 50% Merlot. Geographical location and characteristics of the vineyard: Corvina comes from the Sant'Ambrogio di Valpolicella vineyard, in a hilly area. Merlot from the areas surrounding Valpolicella. Average altitude of the land: 100-250 meters above sea level. Soil type: calcareous-clayey, with a good presence of skeleton. Training system and planting density: spurred cordon for Merlot and guyot for Corvina, with 5,000 plants per hectare. Average age of the vines: 20 years. Load of buds: 7/8 per plant. Yield per hectare: 90 quintals per hectare. Period and method of harvest: in the last ten days of September for the Merlot and the first ten days of October for the Corvina, depending on the season. Harvesting is manual. Vinification : vinification in red with maceration on the skins for 12/15 days to maximize the varietal characteristics of the territory. After the alcoholic fermentation, the racking and pressing takes place. The wine completely undergoes malolactic fermentation and is aged in 500-liter tonneaux and large barrels for 12 months. Refinement in bottles for a few months follows. Color : ruby red. Bouquet: sensation of red fruit, blackberry and morello cherry. Taste: strong minerality and freshness of Corvina which is completed by the sweetness of the Merlot tannins. Serving temperature: at 18-20 ° C Food matches: it goes well with typical Mediterranean cuisine, roasts, grills and cold cuts.
