Cabernet Sauvignon is a noble grape variety famous for its ability to give rise to full-bodied red wines and incomparable bouquet. Obtained from a careful selection of 85% Cabernet Sauvignon and 15% Cabernet Franc, it is vinified with traditional methods, aged and refined in small French oak barrels.
Grapes : 85% Cabernet Sauvignon and 15% Cabernet Franc Geographical location and characteristics of the vineyard : in the municipality of Peschiera del Garda south of the lake. It has a southern exposure. Average altitude of the land: 80 meters above sea level . Soil type : clayey-clay. Training system and plant density : spurred cordon . Average age of the vines : 20 years. per hectare: 80 quintals. Period and method of harvesting : last ten days of September, early October. Vinification : fermentation for about 3 weeks in stainless steel tanks with frequent pumping over to promote the release of substances from the skins. Aging 15/18 months in new and used barriques. After racking it remains for 2/3 months in stainless steel tanks and finally it is bottled and remains in the bottle for 5/6 months before sale. Color : cherry red, with very lively reflections, with garnet veins. Bouquet : typical with a pronounced varietal herbaceous note, pleasantly reminiscent of the noses of Bordeaux. Taste : pleasantly sweet, very well blended with notes of sage and green pepper, with a good tannic concentration with spicy nuances. Serving temperature: 18-20 ° C Food matches : suitable for countless gastronomic dishes, such as game, grilled meats and aged cheeses.
