Grape variety: Negroamaro. Training system: mainly guyot. Age of the vines: between 15 and 30 years. Production area: red soils very rich in iron oxides lying on limestone, located in the Salento peninsula (provinces of Taranto and Brindisi). Vinification: destemming-pressing of the grapes, maceration at a controlled temperature for 8-10 days with periodic pumping over. Racking and malolactic fermentation in stainless steel. Aging in second passage American and French oak barriques for the following 4-5 months. Sensory characteristics: ruby red with purple reflections intense, vinous, spicy and fruity aroma, with notes of small black berries (black currant and wild berries). Medium-bodied, velvety, excellent balance between freshness and pseudo-caloric sensations, with a long and savory finish. Food matches: excellent with rich first courses, meats in general and medium-aged cheeses. Serving temperature: 16-18 ° C.
