TYPE OF SOIL: Medium calcareous mixture. TRAINING SYSTEM: Abruzzo pergola. HARVEST: Month of October. YIELD PER HECTARE: 120 q of grapes. VINIFICATION Fermentation and maceration for 14 days in temperature controlled stainless steel vats. Immediately after racking, fermentation in steel is completed. Storage and refinement until bottling. BOTTLING: In the spring following the harvest it is marketed from the month of May. COLOR: Intense red. CHARACTERISTICS: Intense and penetrating aroma with a very slight hint of morello cherry. Balanced and pleasant taste, slightly tannic and velvety, it has a purebred backbone, with a wonderful aromatic persistence. ALCOHOL CONTENT: 13% vol. PAIRING Macaroni alla chitarra with sheep's sauce, beef medallions with brandy.
