Grapes: 100% Corvina Veronese. Geographical location: Sant'Ambrogio di Valpolicella - Verona, Costalunga estate in a hilly area. Average altitude of the land: 350 m above sea level, facing south. Soil type: The type of soil is mainly calcareous morainic, rich in skeleton and with the presence of clay. Vinification: The "Cresasso" is a wine that comes from a careful research and selection of the best grapes of Corvina. The manual harvest is done in two distinct moments, a first selection takes place in the second fortnight of September, collecting the grapes in plateaus and left to dry for 2 months followed by fermentation for 20 days and aging in French oak tonneau for 24 months. The remaining part of corvina not harvested during the harvest is over-ripened on the plant until the end of October, at the end of which it is fermented in steel containers. The "Cresasso" is obtained from the blend of the two fermentations, it is a wine with a deep ruby color and an important structure and alcohol content. The nose recalls notes of red fruit such as black cherry, cherry and spicy notes of incense and pepper, typical aromas of the Corvina grape. Color: Deep ruby red. Bouquet: An enveloping olfactory spectrum that opens with pleasant notes of red fruit, black cherry, blackberry, jam and plum. Taste: It is a rich, savory and not too tannic corvina. The good alcohol content, and a body with rich aromas, give it a pleasantly long finish. Food matches: "Cresasso", with its structure, goes well with all tasty and rich recipes. Ideal with grilled meats, roasts, game and cured meats, as well as aged cheeses. Serving temperature: 18/20 ° C
