VINIFICATION The grapes that are not destemmed undergo a soft pressing. The must ferments in steel tanks, at a controlled temperature of about 18 C. The wine is refined on the fine lees for 5-6 months, in order to enrich its organoleptic characteristics
TRAINING SYSTEM Vertical espalier , spurred cordon pruning
COLOR Onion peel, with peach reflections
BOUQUET Fresh and fruity, with aromas reminiscent of cherry, wild strawberry, and Mediterranean aromatic herbs
PAIRINGS Excellent as an aperitif, or in combination with fried fish and vegetables, fresh cheeses and tasty meats such as tàrtara and sausages
TASTE Well balanced, certainly of great freshness and flavor, fruity and persistent finish
