Vinification : in white, cryomaceration on the skins for 48 hours at low temperature, controlled fermentation over 20 days, maturation on the noble lees with frequent batonnage. The aroma is fine and very intense. Already at the first taste you can feel the citrus notes of cherry which makes it appreciable with delicious dishes, such as white meats, broth, scamorza, cheeses and various cold cuts. It also goes very well with fish-based dishes, paying particular attention to the right temperature which must be around 12 ° C.
