The Cataldino is a Montepulciano vinified entirely in white, in complete absence of skins and fermented with indigenous yeasts. This wine is the result of the draining and the first pressing (0.2 Bar). The result is a powder pink color. Of great gastronomic versatility. The company is fighting to be able to use the name "rosa" instead of "rosato".
Cataldino di Cataldi Madonna is a particular rosé, obtained from the totally white vinification of Montepulciano grapes from the Macerone locality at 380 meters above sea level. It therefore has a deep pink color, but less intense than the classic Cerasuolo. Delicate floral and small fruit scents stand out on the nose. In the mouth it reveals all its lightness and pleasantness, with floral notes and great freshness. On the table it is extremely versatile.
