The grapes are harvested by hand, destemmed, pressed and placed in steel tanks where the must ferments for about 18 days. The refinement in steel tanks on its fine lees lasts about 10 months and is followed by bottling with screw cap with Tin Foil liner followed by a minimum refinement period in the bottle of 6 months. This Rosato is an unfiltered and unstabilized natural wine and above all it does not contain any chemical additives in the cellar.
