The harvest of these grapes is done at different times, starting from the end of October until the end of December. The grapes are left to dry and mold on the plant, to favor the sugar concentration and the attack by the noble rots. The grapes thus harvested are pressed. The wine ferments in steel and is kept there for about 8 months before being bottled for ageing. About 1,200 bottles of this wine are produced each year.
