Of a beautiful intense straw yellow with golden reflections, the wine develops a fascinating and articulated bouquet. Notes of yellow flowers, cedar, ginger, apricot, aromatic herbs and white pepper as well as balsamic and mineral hints follow one another and intertwine giving a long progression in the glass. On the palate it is persistent, full-bodied, juicy: fruits, herbs and spices return, expressing themselves with intensity and finding balance thanks to a marked sapidity, a right freshness and a sweet final astringency given by a silky and delicate tannic texture.
Variety : Strains aged 15-30 years of the Sauvignon Blanc variety from different selections. the land: Our home vineyard extends to 500 m asl with a soil embellished with abundant mixed skeleton of volcanic porphyry and dolomitic limestone. The result of an intense biodynamic work, the plot enjoys an enormous and enormous biodiversity. Harvest : The harvest is done by hand. Each bunch is examined and only the ripe and golden yellow ones end their journey in the amphorae. Vinification: Fermentation takes place in terracotta amphorae on the skins and is spontaneous thanks to indigenous yeasts. Only in spring the wine is removed from the skins. The refinement continues in amphora on the fine lees for another 14 months and without adding sulphites until just before bottling, thus developing a natural stability that gives it a good aging potential. Recommendations : Excellent to drink from the beginning of 2020 until 2025 but, if well preserved, it can certainly go further, giving a fascinating evolution over time. Serve it at a temperature of 13--15 ° C in large glasses. Ideal as the culminating moment of a banquet but also alone as a "meditation" wine, to better appreciate its rich complexity and very long evolution in the glass.
