BALDO classic method * zero dosage *. No dosage, no addition of “liqueur d'expédition” so as not to obscure its truest, authentic and crystalline expression. From pure Chardonnay grapes, it has an important structure which, together with the fragrance and aromatic complexity that characterize it, make it an excellent sparkling wine.
Vinification : The first fermentation takes place in stainless steel tanks at a controlled temperature. The second fermentation takes place in the bottle very slowly, at a controlled temperature (about 11-12 ° C), leaving the product to mature on its lees for 30-36 months. We proceed with the traditional manual operation of shaking the bottles, called remuage, placed on the pupitres. The operation is completed with disgorgement and after refinement the sparkling wine is ready to be placed on the market.
