Grapes : 100% Trebbiano di Lugana. Geographical location and characteristics of the vineyard: between the municipalities of Peschiera and Desenzano, area south of Lake Garda. Average altitude of the land: from 70 to 80 meters above sea level . Soil type : cretaceous-clayey. Training system and planting density : guyot. Density from 3,700 to 4,000 plants per hectare. Average age of the vines : 40 years . Load of buds : 8/10 per plant. Yield per hectare : 120 quintals. Period and method of harvest: first ten days of September. Manual harvest. Vinification : the must deriving from the pressing of the whole grapes ferments thanks to the yeasts present on the grapes themselves at a controlled temperature of 16 ° C, in steel containers, until the moment of fermentation. The wine rests for 24 months where it evolves and matures thanks to the lysis of the yeasts, with the release of aromas deriving from cell breakdown. The bottles are then placed on the pupitres and clarified by remuage and subsequently the deposit is removed by disgorgement. Color : pale straw yellow with golden reflections, subtle, elegant and persistent perlage. Bouquet: intense with white flowers and enveloping with notes of pear and apple and nuances of peach and citrus. Taste : balanced and enveloping on the palate, characterized by a silky acid vein that gives it freshness. Serving temperature : 7-8 ° C. Food matches: excellent as an aperitif and for the whole meal.
