TYPE: Brut sparkling wine. GRAPES: Chardonnay and pinot noir. PRODUCTION AREA: C.da Granaro Pianella (PE). SURFACE OF THE VINEYARD: 1.00.00 ha. ALTITUDE OF THE VINEYARD: 180 m asl. TYPE OF SOIL: Medium calcareous mixture. TRAINING SYSTEM: Abruzzo pergola. HARVEST: First ten days of September with manual harvesting and selection of the bunches. YIELD PER HECTARE: 130 q of grapes. VINIFICATION: Pressing, subsequent decanting of the must obtained and fermentation in temperature-controlled tanks. The wine obtained with an alcohol content of about 11% vol. it is started again for fermentation with the addition of sucrose in a closed container (autoclave) using the long Charmat system. BOTTLING: About six months after refermentation. COLOR: Straw yellow. CHARACTERISTICS: The long stay on noble yeasts gives the sparkling wine aromas of exotic fruit and bread crust. On the palate, its acidulous vein marries well with notes of green apple. ALCOHOL CONTENT: 12.5% vol. WINE PAIRING: Fiadoni cod fritters, apple sticks and Parma ham, canapés with orapi and aspic anchovies with ham.
