TYPE: Moscato sparkling wine. GRAPES: 100% Moscato. PRODUCTION AREA: C.da Granaro Pianella (PE). SURFACE OF THE VINEYARD: 0.60.00 ha. ALTITUDE OF THE VINEYARD: 180 m asl. TYPE OF SOIL: Medium calcareous mixture. TRAINING SYSTEM: Abruzzo pergola. HARVEST: First ten days of September with manual harvesting and selection of the bunches. YIELD PER HECTARE: 130 q of grapes. VINIFICATION: Pressing, subsequent decanting of the must obtained. Subsequently, fermentation is activated in a closed container (autoclave) in order to obtain the second fermentation. Upon reaching an alcohol content of 7% vol. fermentation is interrupted in order to start the subsequent bottling. BOTTLING: November following the harvest. COLOR: Very pale straw yellow. CHARACTERISTICS: It has an excellent aromatic persistence. The taste is sweet with a balanced presence of muscat. ALCOHOL CONTENT: 7% vol. PAIRING: Cicerchiata ricotta pizza mimosa cake Saint-Honoré cake chestnut meringue cake.
