Hypology: Passerina Alcohol content: 13.00% vol Grape variety: very old, native to the Adriatic area, Passerina produces a pure wine that has a straw yellow color with greenish hues. Harvest: manual harvesting of the grapes, slightly earlier than their ripening time to favor an increase in acidity. Vinification: destemming of the grapes with subsequent fermentation in steel containers kept at low temperatures with the inoculation of selected yeasts. The product will then be left to refine in steel tanks. Organoleptic characteristics: delicate but complex on the nose it takes on notes of white flowers with outlines ranging from tropical fruits to spices to citrus notes. On the palate its characteristic acidity remains in the right relationship with its sapidity which gives a complex and pleasant body. Serving temperature: 10 ° - 12 ° Pairing: it goes well both as an aperitif and with fish-based dishes, including fried, with shellfish, with risotto, with white meats and even aged cheeses.
