Grape variety : Pecorino. Production area : Municipality of Orsogna. Vinification : The selected grapes are harvested by hand in mid-September. Soft pressing is followed by an immediate lowering of the temperature, to facilitate decantation and the elimination of turbidity suspended in the must. Fermentation takes place at a controlled temperature of 14-15 ° C in steel vats. The wine remains in stainless steel tanks at a temperature of 10 ° C, with the aim of keeping its aroma intact. Idea del Vino : Wine for young, fairly experienced consumers looking for products with a great price / quality ratio. Sensory characteristics : Straw yellow in color with golden reflections, limpid. The scent is intense and recalls flowers and white fruits, with varietal notes that emerge. Soft and well balanced on the palate. Ready to drink wine, whose development makes it very interesting also in the year following the harvest. Food matches : Excellent with hot appetizers, first and second courses of fish (soups and grilled), good with fresh cheeses. Serving temperature : 12-14 ° C.
