Vinification
Verdejo is fermented in stainless steel tanks at 13ºC The low temperature produces a higher aromatic structure After fermentation, the wine matures on the lees for three months, making battonage every week to obtain a more structured and silky texture to obtain greater persistence in the mouth .
Sensory characteristics
Straw yellow with green reflections, clear and bright The nose is powerful and fresh, with aromas of banana and peach and notes of fresh hay The palate is round and with a long aftertaste, with hints of white fruit and notes of fennel, typical of the grape variety to be which it is composed of.
At the table
We recommend pairing with risotto, seafood and light cheeses.
