PRODUCTION AREA Corbara Lake (Terni). Altitude between 150 and 500 meters of altitude. East, south-east exposure.

VARIETY Chardonnay 40%, Sauvignon Blanc 30%, Semillon 30%

TYPE OF SOIL Of volcanic origin, tuffaceous, rich in skeleton.

AGE OF VINEYARDS From 20 to 25 years

VINIFICATION Manual harvest, in boxes, following the different ripening periods between the end of August and the first half of September. The grapes, after destemming, undergo a soft pressing. The must ferments in French oak barrels of different toasting. This is followed by a refinement of the wine on the fine lees for 5-6 months, in order to enrich its organoleptic characteristics.

TRAINING SYSTEM Espalier with mixed spurred cordon and guyot pruning.

COLOR Straw yellow tending to golden.

BOUQUET Vibrant, refined, of great amplitude and intensity. Sweet notes of hazelnut, vanilla are mixed with minerals and ripe fruit, pear and dried white peach

PAIRING Eggs and first courses with truffles, paté, roasted white meat, medium-aged cheeses.

TASTE Soft, enveloping entry, with fresh acidity with good balance: long persistence

NOTES Salviano di Salviano is produced from vineyards lying on the hills overlooking the northern shore of Lake Corbara, of ancient volcanic origin and rich in tuffaceous rock. An elegant wine that comes from Chardonnay, Semillon and Sauvignon Blanc grapes, harvested by hand, at the peak of ripeness, from late August to mid-September.
