Lo Champagne Brut Réserve di Billecart-Salmon proviene dall'assemblaggio dei tre vitigni più importanti della Champagne, appartenenti a varie annate: il pinot nero, pinot bianco e lo chardonnay. Le uve fanno parte di vigneti di 28 comuni della Marne. La vinificazione avviene separatamente per ogni uva, in piccoli fusti di legno da 50 ettolitri, per circa 3 settimane, con doppia decantazione del mosto. Utilizzo del 40% di Vin de Réserve.

A partire dalle tre uve champenois, a leggera prevalenza di Pinot Meunier.
