Once harvested, the olives are immediately transported to the company oil mill, equipped with a system for cold pressing in a continuous cycle and pressed within a maximum of 24 hours, avoiding risky intervals between harvesting and pressing and thus ensuring the maintenance of all organoleptic characteristics of the fruit. Subsequently the oil is left to settle in a completely natural way. So it rests quietly and dry, in the dark, away from temperature fluctuations and noises, in steel containers that have taken the place of the old and fascinating tiles, large terracotta containers used in past centuries and still present in the company as evidence of the ancient craft.
  • DESCRIPTION Castello del Terriccio is one of the largest agricultural properties in Tuscany: approximately 1500 hectares in total, of which 65 are destined for vineyards and 40 for olive groves, extending along the northern limit of the Tuscan Maremma near Bolgheri. In the first half of the 20th century, the estate was acquired by the Marquises Serafini Ferri. With the important land improvement interventions carried out over the years, they bring the company to a physiognomy very close to the current one. Until the seventies the estate was divided between 63 sharecropping families who lived in the hamlet of Terriccio and was so famous for its cereal activity that it conquered the European record for the production of maize in second harvest. In 1975 it was inherited by Gian Annibale Rossi of Medelana, who decides to refound it, consecrating it as a place of research for excellence in vineyards and wines, keeping intact the ancient character and defending a territorial heritage of great value and extraordinary beauty. Today the property has passed to Vittorio Piozzo di Rosignano Rossi di Medelana, the only grandson of the cavalier Gian Annibale. He too descended from noble families with large landholdings in the country that date back to past centuries, who has dedicated himself to the management of the family's agricultural activities and now to the direct management of Castello del Terriccio .
