It is obtained by soft pressing and destemming of the grapes and fermentation in red (with the skins) and timed spraying of the cap at a controlled temperature. Aging is in cement and fiberglass tanks with a light passage in wooden barrels and bottling at least one year after the harvest.
The name "Calanchi" has a direct reference to the phenomenon of soil erosion by atmospheric agents, typical of the Abruzzo area. With a strong temperament, robust, full-bodied, "suspicious and stubborn" like the people of Abruzzo, I Calanchi, and the hard and guttural sound of the "K", represent the paradigm of a whole territory: great harshness and obstacles blend harmoniously with seductive sunny hills. "I Calanchi" tells our essence: an obsequious love for the "land" and an innate respect for Montepulciano.
Alcohol: 14.5% vol. Total acidity: 6.00 g / l. At the sight the color is purplish red, the large boouquet, pleasant with hints of violet. Then as soon as it is brought to the mouth the sour tannins are felt immediately, and then leave room for the dry, soft, enveloping flavor of a full-bodied and robust Montepulciano. It lends itself to aging even for a long time, better if in a horizontal position. Given its complex structure it could produce a light sediment synonymous with positive evolution over time. It goes very well with dishes with a relevant and spicy taste such as roasts and game and typical dishes of Abruzzo cuisine, but we also recommend it alone, at the end of a meal. It is served at room temperature (18-22 degrees), uncorking the bottle at least an hour before, pouring it into a decanter respecting any sediment.
