The history of the Volcano is dotted with eruptions that have shaped its shape. Legendary that of 1614, which lasted 10 years, the longest in historical times: the vines that produce this wine grow right above this flow. A small parcel hosts the Pinot Noir which has been grown in the area for centuries, albeit marginally. The result is an absolutely original version of the noble variety.
VINEYARD: Sciaranuova. VARIETY: Pinot Noir. TYPE OF SOIL: The soils have perfect exposure and position, black due to the lava sands, and therefore extraordinarily rich in minerals around the woods and more recent lava flows. ALTITUDE: 820 meters above sea level. YIELD PER HECTARE: 60 quintals. TRAINING SYSTEM: Spurred cordon. PLANT DENSITY: 5,000 plants per hectare. HARVEST PERIOD: 19th September. VINIFICATION: The grapes, harvested in the crate, were selected by hand and sent for destemming, without being crushed. After inoculation they fermented in open tonneaux, around 22 ° C, with soft manual punching down for 12 days on the skins, followed by pressing in a basket press. AGING: 6 months in 3rd passage tonneaux, then steel. BOTTLING PERIOD: July ALCOHOL CONTENT: 14% vol. TOTAL ACIDITY: 4.90 g / l. PH: 3.68. AGING CAPACITY: good potential, from 5 to 10 years. BOTTLE SIZE: 1,5 l. ORGANOLEPTIC NOTES: Flint, ink, wild plums and cherries among the aromas of this very particular version of Pinot Noir. Velvety but reactive tannins in the mouth give a lively red, but gentle and elegant at the same time. "Good vibrations". PAIRING: quail and woodcock and other refined dishes based on game. Also perfect with a slice of fresh caciocavallo, or alongside a cauliflower flan.
