The history of the Volcano is dotted with eruptions that have shaped its shape. Legendary that of 1614, which lasted 10 years, the longest in historical times: the vines that produce this wine grow right above this flow. A small parcel hosts the Pinot Noir which has been grown in the area for centuries, albeit marginally. The result is an absolutely original version of the noble variety.

Of all the red grape varieties in the world, Pinot Noir is considered the most noble and elegant and at the same time the most difficult to interpret, the one that places the winemaker and the consumer in the face of perhaps the most complex tasting. The term Pinot derives from the French and translated literally means "pine cone", a name attributed due to the shape of the bunch of this grape, with very attached berries and an elongated shape, typical of pine cones.
Produced since 1990 exclusively from Pinot Noir grapes, it is, in a certain sense, the "alter ego" of Cervaro: together they represent the two different expressions of the complex and refined soul of Castello della Sala. The 4 hectares of vineyards from which it is produced are located at over 400 meters above sea level on calcareous soils rich in fossils with sands of sedimentary origin dating back to the Pliocene.
