After racking, it is aged in small wooden barrels for 18-24 months. The wine is then left to rest for about 6 months in stainless steel vats. At this point it can be bottled. After further aging in the bottle for at least 6 months in the cellar at a temperature of 20°C, the wine is finally ready to drink.
