Grapes: Sangiovese, Black Malvasia, Aglianico. Training system: mainly guyot. Age of the vines: between 15 and 30 years. Production area: red soils very rich in iron oxides lying on limestone, located in the Salento peninsula. Vinification: destemming-crushing of the grapes, maceration at a controlled temperature for 8-10 days with periodic pumping over. Racking and malolactic fermentation in stainless steel. Sensory characteristics: intense ruby red color, strong, fruity aroma (small red fruits). Medium body, soft, harmonious. Ready to drink. Food matches: excellent with rich first courses and red meats, it also goes well with game and medium-aged cheeses. Serving temperature: 16-18 ° CC
