Cerasuolo is a gem that only Abruzzo can offer: a wine produced exclusively from Montepulciano grapes, left unpeeled for a very short time and immediately fermented.
If we want it would be the real "Montepulciano" as it is the wine that our grandparents made from the first pressing of the grapes. The name derives from the perfume and its unmistakable cherry red color (“cerasa” in fact). Obtained from soft pressing and short cryomaceration, racking within 24 hours and fermentation of the must at a controlled temperature, stop for refrigeration and immediate filtration. Storage takes place in steel and fiberglass tanks and sterile bottling from January. Alcohol: 14.5% vol. Total acidity: 6.50 g / l. The color is typical of Cerasuolo, bright with accentuated shades. The Bouquet is delicately fruity, characteristic with hints of apple and peach. With a strong temperament (14.5%), it has a frank, dry, soft, savory and harmonious flavor. It is recommended to consume it within the year giving the best of itself until the August following the harvest. However, it can be perfectly stored for two years, in a horizontal position and at a low temperature. It is an aperitif wine but also a meal that goes well with fish dishes with a pronounced flavor, seafood and Italian appetizers, risottos and pasta, white meats and poultry. It is served at a temperature of 12/14 degrees, uncorking the bottle at the moment.
