Vinification : the harvest is done by hand by mid-September. The fruits are brought to the cellar and gently pressed to obtain a clear and full of aromas must, which is then transferred to stainless steel tanks at a controlled temperature, where fermentation takes place. At the end of the process, the product is filtered and placed in a stainless steel autoclave (pressurized tank) where the sparkling wine is made with the Martinotti or Charmat method

Characteristics of the wine : upon examination of the eyes it is crystal clear, pale yellow in color and with a fine and persistent perlage. The nose is intense, fine and quite complex, with notes of white flowers, white peach and lemon peel, as well as mineral hints. When tasted it is dry, quite warm and soft, fresh and savory. Overall intense, with an undemanding structure and a good aromatic persistence
Pairing : excellent as an aperitif, with light fried foods or fresh vegetable soup
Serve at a temperature of : 6-8 ° C.
