The vinification foresees that the grapes, selected in the vineyard and de-stemmed, are immediately pressed. Maceration lasted about 15 days, at a maximum temperature of 30 ° C. The malolactic fermentation ended before the end of winter. This is followed by a long period of aging for 24 months in oak barrels of different capacities (27-53-77 Hl) which give the wine maturity and balance.
