Passito

Obtained from Vernaccia Nera grapes, with the production area at an altitude comparable to mountain wines where drying with hanging bunches is expected, at the end of which the must is left to ferment and refine in barriques for at least three years.

The warm rays of this magnificent 2015 summer have allowed us to produce again a warm jewel: the "Sole d'Autunno", our organic Chardonnay passito. Already in the post in which I told you about the Cronistoria Della Biovendemmia 2015 I anticipated the return of this extraordinary sweet wine. But let's try to find out more about this nectar produced by Maso Martis organic farm on the hills of Trento only in a few exceptional years! Also in this case the rule applies that the quality of great wines does not start in the cellar, but first of all in the countryside... in fact, only with the presence of favorable conditions that guarantee an exceptional wine, does the production of the "Autumn Sun" begin ”. The grapes harvested with gradual maturation are carefully selected. Only the best and perfect bunches are placed in small crates and left to dry in a cool, well-ventilated room for a few months.

That is, as many would say that you should NOT write a wine technical sheet. But that's how I wrote it, straight off, drinking Albamarina side B, telling what is really important in wine: emotion. Have you tried Albamarina 2012 yet? Well done, it's a good wine, I'm sure you liked it. Now the "B side" comes out. Side B are 10 hectoliters of Catarratto passito 2012 that I had decided to throw away. As I always do when I do something new and my mom disagrees (basically ALL of the time), I said to her: Mom, what do you care? If it doesn't turn out good, we throw it away – or sell it in bulk. She is not very convinced, but after a few days of discussions she finally lets me do it (thanks mom). So: I left 15 hectoliters (yes, 15, then I'll explain) of passito in overfilled barrels, hoping for the fioretta to come, for another 18 months. INCREDIBLY, this wine, despite having been sulphited (and don't ask me how it's possible, because I don't know either) continued to ferment very slowly for another 18 months, until from the initial 13.5 it reached an alcohol content of 15% vol – a little more actually, but we don't tell anyone, okay? At some point it FINALLY came out good. But no normal good, just good. So: the B side. I took 10 hectoliters and bottled it (which is what you can now find on #vgm) and kept the other 5 in strictly full barrels to make a perpetual one. Which, when it's good, is the best thing in the world of wine. PERPETUAL IS WINE - if you don't believe it, call De Bartoli. But the perpetual, if it turns out good, we'll talk about it in 5/6 years. For the moment there is the B side.

Produced in small quantities, Nektar comes from Vermentino grapes grown on slopes sheltered by the mountains and near the sea. The bunches, selected and harvested by hand, and subsequently dried in airy environments, give a harmonious and elegant wine with an intense golden yellow color. A passito that represents our nectar, the name itself celebrates the Nektar: mythical drink of the gods, which Ganimende poured, and Hebe offered to the gods of Olympus.

Moscato wine belongs to the magical world of those that develop aromas and flavors over time, which the rich and noble families of the past loved to dedicate to their most illustrious guests, as a true symbol of opulence. The history of this wine has its roots as early as the 13th century, a time when it was made famous, in most of Europe, by the merchants of the Republic of Venice. Muscat includes several varieties, including white muscat, yellow muscat and orange blossom. Tarì is obtained entirely from the white variety also known locally as Reale. This variety is the more valuable and its name derives from muscum (moss) due to its intense aroma and sweet aroma.

We were the first and the only ones to plant and vinify this vine in Maremma, from which we obtain only 2,000 small bottles every year, highly sought after by starred restaurants and collectors, for a unique taste experience.

The Aleatico Passito dell'Elba docg 2021 is a natural passito obtained from the aromatic Aleatico vine, native to the island of Elba. After the harvest which generally takes place during the first half of September, the grapes are dried on special racks in the open air for a period of about 10-15 days. Vinified in steel containers at a controlled temperature. Maceration on the skins for about 7 days.

Menhir is a liqueur sweet wine, with a small addition of alcohol, son of the island of Pantelleria. It is obtained from the Zibibbo variety which contains everything this splendid island contains: sun, volcanic earth, warm African winds. The grapes, after being dried in the sun, are left to macerate in the must during the entire fermentation which is blocked with a small addition of alcohol.

Jemara is a natural passito, with no added alcohol, son of the island of Pantelleria, where the entire production process is developed up to bottling, as required by the Production Regulations. It is obtained from the Zibibbo variety which contains everything this splendid island contains: sun, volcanic earth, warm African winds. The grapes, after being dried in the sun, are left to macerate in the must throughout the fermentation process, giving it unmistakable sweet and honeyed notes.

Golden with amber reflections, brilliant, Intense and persistent, hints of apricot compote, candied figs amalgamated with notes of dried fruit and spices, sweet, well structured, elegant, fresh and sapid, long finish, spicy aroma in the mouth.

This excellent wine is obtained from various carefully selected grapes and left to dry naturally for 60 days. The wine obtained is first aged in barriques and subsequently in the bottle.

Passito red wine IGT from the hills of Mantua Alto Mincio This great wine is obtained from various carefully selected grapes and left to dry on the vine for 40/50 days. Its great personality is captivating on the palate of the taster. Dark red colour, characteristic aroma of fruity, spicy, undergrowth and cherry.

Since 1995 we have been thinking and trying to make a sweet Passito wine that thrills both the body and the spirit: a few golden bunches of Malvasia and Trebbiano ripened under the Tuscan sun, picked with delicacy and placed in small boxes arranged one by one in the airy room for the long drying period. Weekly check of the concentration of sugars and, usually a few days before Christmas, the pressing, the birth of this must which gives off aromas of apricot, peach, plum that bring the mind back to the summer that has long since passed. We fill a barrique with this nectar and let the fermentation take its course. A long and tiring job that, only after a long time and not always, pays off the sacrifices. Passito is the wine of the soul, spirit and emotion. We only bottle it in vintages that meet these conditions.

Sweet wine obtained from white grapes from the Veneto region, with an ocher yellow colour, rich bouquet of candied fruit, apricot, raisins, vanilla and orange blossom. On the palate it is sweet and persuasive and is well balanced with the varietal freshness that gives elegance and longevity. Excellent with dry pastries, blue and medium/long-aged cheeses combined with jams and honey.

It has a more or less deep ruby red color tending towards garnet. The scents are clean, refined, delicate but intense and persistent…

It has an amber yellow color with golden reflections. The aromas are intense and persistent and recall dried and candied fruit…

Lands of Offida DOC Passerina

light amber color with antique golden tones; on the nose apricot, peach, and spices; in the mouth sweet without excesses, almondy, elegant and very full-bodied, long and persistent.

The combination we suggest is a goose foie gras escalope, but perfection is achieved in a glass, in front of the fireplace in good company!

Sweet and full-bodied, balanced, with a pleasant acid note and robust tannins. A persistent finish enhances the return of the rich aromatic bouquet already perceived on the nose.

“...a crumb of happiness” Of a beautiful golden yellow colour. Of great character, velvety and soft, it is fresh and elegant in the mouth. The nose shows notes of honey, spices and white flowers. "As mostly happens to those who, after having suffered a lot, finally grab a crumb of happiness..." A wine of great character, rich, velvety, sumptuous, golden. A great pleasure. By itself it is already a dessert. It helps to reflect and not forget to live well.

Produced from a careful selection of Moscato from Sicily, Lo Zhara Passito is an excellence thanks to a unique and inimitable relationship between sweetness and freshness. Harmonious, enveloping, perfect, it is a sweet wine capable of a very long aging in the bottle, the emotions are guaranteed after many years. The grapes, dried on racks, are pressed and left to macerate for about 5 hours, then they are softly pressed and fermented at 18-20°.

Nuragus di Cagliari Audarya is a wine that expresses the two souls of Sardinia, the land and the sea.

It comes from Montepulciano grapes harvested late and then left to dry until late winter.

The must is fermented in steel tanks and then left to mature in small oak barrels for nine months

Color: Intense ruby red. Smell: The nose is elegantly austere, with hints of black fruit in alcohol and hints of licorice. Taste: On the palate it has a broad and harmonious taste, extremely persistent.

Color: Dark ruby red color. Smell: Bouquet of raisin flowers and red fruit in alcohol, with hints of licorice. Taste: It is persistent with sweet spices and licorice.

Color: Golden yellow wine. Smell: Aromas of dried sweet fruit, cedar, dehydrated apricot and honey. Taste: Extremely sweet, mitigated by a good freshness, which prolongs the aromatic sensations of dried fruit.
