Salice Salentino DOP Cantalupi is produced with Negroamaro and Malvasia nera di Lecce grapes from spurred cordon cultivated vines on alluvial soils, medium texture with areas tending towards limestone. The harvest takes place by destemming and soft pressing. Fermentation in stainless steel tanks at controlled temperature. Maceration for 12 days at a temperature of 28-30°C. Aging for at least 12 months in hl oak barrels. 30.

In the glass it has a beautiful ruby red color, very concentrated. The vegetal notes discreetly face the nose, where it is then enveloped by an iridescent fan, between fruity and spicy. When tasted it has a good structure, with a warm and enveloping sip. Wonderful with cannelloni with sheep's sauce.

This wine takes its name from an underground hiding place, where the locals found shelter during dangerous situations. The entire farm took on the name of Rifugio, which today is a particularly suitable area for the cultivation of fine Primitivo grapes.

Every year the "Nero" of the Conti Zecca winery reaches the "finals" in the judgments of the most renowned wine guides, obtaining scores that, if they do not exceed 90 cents, are punctually very close. This year too is no exception. It is a wine that follows a long aging: it ages 18 months in French wooden barriques, one year in large oak barrels and six months in bottle.

The Aglianico Salento PGI "Terra" from the Conti Zecca winery is a ruby red wine. Notes of wild berries, tobacco and vanilla emerge on the nose. The flavor is enveloping and harmonious with soft tannins. Before being bottled, it is aged in barriques and oak barrels.

Prodotto con uve Negroamaro, raccolte manualmente ad inizio settembre. Breve macerazione pellicolare direttamente in presa e fermentazione in bianco a temperatura controllata (18°C), successivo breve affinamento in acciaio prima di essere imbottigliato.

Prodotto con uve Primitivo, raccolte a mano nella terza decade di agosto. Fermentazione alcolica a temperature non superiori ai 25°C, successivo breve affinamento in acciaio prima di essere imbottigliato.

Colore: giallo dorato luminoso. Profumo: deliziosi profumi di biancospino e acacia cedro e pompelmo giallo affiancano note minerali e saline. Soffi di erbe aromatiche. Sapore: fresco e sapido al palato con ritorno agrumato. Buona persistenza.

E' datata 1932 la nascita del “Consorzio Produttori Vini e Mosti rossi superiori da taglio per la zona di Manduria”. All’epoca il Primitivo, come indicato nel nome del consorzio, era deputato a rafforzare i famosi vini francesi e del nord Italia.

The second novelty that we had announced is the introduction of Susumaniello in the Cantalupi family! Susumaniello is a vine that is part of the enological history of Salento and which in recent years has been at the center of a rediscovery and revaluation in which we join to offer our interpretation of this versatile and very interesting grape.

Since the time of Frederick II, falcons have been hunted on the hills of Castel del Monte. In these lands, among luxuriant vines, the lesser kestrel finds its natural habitat, a rare species of bird of prey that bears witness to an unchanged nature. A skilful blend of Nero di Troia and Merlot grapes. Ruby red in color with violet reflections, it is fresh and fruity. Balanced and persistent. Elegant with hints of blackberry and black cherry, small red fruits and balsamic and vanilla notes. The taste is refined, rightly tannic and structured.

The Puglia Chardonnay of the Marchesi Antinori is born in the vineyards of the Tormaresca farm, owned by the Antinori family and located in the territories of Salento and the Murgia of Bari.

Character, personality and qualitative potential are the characteristics that the Puglean territory transmits to the indigenous and non-indigenous varieties that are cultivated there. This is why the Antinori family's investments in Puglia began in 1998, which considered this region among the most promising in Italy for the production of quality wines, with a strong territorial identity.

Primitivo Neprica by Tormaresca Antinori is a puliese red wine from the province of Brindisi, aged in steel for about 8 months to maintain a fragrant and fruity sensorial profile. It has an intense ruby red color, furrowed by purple reflections, and releases notes of black cherries, small fresh and candied red fruits and licorice aromas to the nose, revealing a soft, round sip with evolved tannins, awakened by a balanced freshness .

VINIFICATION: The maceration lasts 12-14 days in 45 quintal steel vats at a controlled temperature of 25°C, with frequent pumping over in order to extract the aromatic and coloring substances and at the same time soften the tannic mass. TASTING NOTES Pure Negroamaro, aged in large oak barrels, has an intense and impenetrable red colour. On the nose, hints of ripe cherry, tobacco and carob are perceived. On the palate it is full-bodied, with a great structure with accentuated tannins that balance well with the alcohol and the vanilla notes typical of wines aged in wood. It is best expressed with cured meats, grilled meats and meat sauce.

Il Passamante è un bosco che corre lungo i nostri vigneti di Negroamaro. Il suo nome ha origini remote e ricorda che anticamente gli amanti vi trovavano rifugio dagli sguardi indiscreti. La macchia mediterranea che lo costituisce, formata da pini, ginestre, lecci, carrubo, mirto e ginepro dona note olfattive e caratteristiche aromatiche che piacevolmente si integrano alle peculiarità organolettiche del vino.
