VARIETY Chardonnay 45%, Sauvignon 45%, Picolit 10%
SOIL TYPE Soils of oceanic origin, rich in clay, sandstone and limestone.
VINIFICATION The grapes are selected on sorting benches before being delicately pressed; from this operation we obtain a free-run must placed directly in spontaneous decantation for 48 hours at 10-12 ° C and a press must which undergoes a further clarification at 10-12 ° C. At the end of these phases the two batches of must are combined to start the alcoholic fermentation. The varieties that make up the Vespa Bianco ferment separately, for 50% in stainless steel at a controlled temperature and for the remaining 50% in oak barrels of 5 and 40 hectoliters.

BOUQUET A tight balance of mineral and citrus notes, which over time transform into a denser sensation of flowers, honey and ripe pear.
PAIRING White meats such as roast chicken or turkey and also veal or pork. Meaty fish.

NOTES A real flagship of the Bastianich winery, the "Vespa Bianco" is a wine created to highlight the power and evolution that only a great Friulian white can achieve. It is in fact a bottle capable of transcending the sum of its parts, confirming itself as a wine of extraordinary complexity and longevity, the one that certainly best represents all the work of the famous winery of Cividale del Friuli.
AGING At the end of fermentation, keeping most of the yeasts, a long period of batonnage begins, alternating with decanting until May, the month in which the assembly phase of the various batches obtained begins, followed finally by bottling in July. The aging in the bottle for more than a year completes the wine before its commercialization.
