VINIFICATION Upon arrival in the cellar, the grapes are de-stemmed and undergo a soft pressing. The must ferments in steel tanks at a controlled temperature of 18 degrees Celsius. Aging on the lees follows until the following March to enrich its organoleptic characteristics. Before bottling, the wine is filtered with potassium caseinate-based cartridges. Finally, the wine is left in the bottle for at least four months before being marketed
