VARIETY 60% Grechetto di Todi, 40% Viognier
TYPE OF SOIL Tufaceous soil with fine gravel.
AGE OF VINES 12 30 years
VINIFICATION Upon arrival in the cellar and before being pressed, the grapes are subjected to further sorting and are then stored for a few hours in the refrigerator to preserve their organoleptic properties. Subsequently the grapes are gently pressed in an anaerobic environment and the must is subjected to a static clarification process at low temperature. Fermentation is spontaneous, with indigenous yeasts only, and takes place in steel tanks at a maximum temperature of 18 ° C, while a small quantity (about 10%) of each variety ferments in French oak barrels. The two varieties are kept separate until the end of the fermentation process, at the end of which, the wine continues its refinement on the fine lees for about five months.
