TYPE Sparkling sweet white wine - Province of Pavia IGT PRODUCTION AREA Oltrepò Pavese. Hilly area between 300-350 meters above sea level with south-south-west exposure. VARIETY 100% Moscato TYPE OF SOIL Limestone-clayey soil. VINIFICATION The grapes are harvested manually and undergo a soft pressing (65% yield). The must obtained is placed in an autoclave for the alcoholic fermentation and when a slight overpressure of 1.5 atmospheres is reached, the fermentation is stopped with the cold and the bottling is carried out. CULTIVATION SYSTEM Guyot and Casarsa COLOR White with typical golden reflections. BOUQUET Unmistakable, fruity, fresh scent with hints of sage, citrus fruits and small white flowers. TASTE Sweet, fresh, elegant taste, balanced acidity and natural sweetness, soft with a long fruity and mineral finish.
