This noble vine derives from a bud mutation of Pinot Noir and, preferring cool climates, finds its ideal habitat in the hills. Livio Felluga vinification gives the wine finesse and elegance, maintaining the faint coppery reflections that unmistakably characterize its color. It is certainly the best-known Friulian wine in the world.
Mainly trained in Guyot, the vines of our Pinot Grigio have their roots in the Ponca (Cormòns flysch in technical terms), soil composed of marl and sandstone of Eocene origin stratified under the seas over the millennia, which gives our wines unique flavor and minerality. The harvest took place during the first half of September. The healthy and perfectly ripe grapes were harvested by hand, in small boxes, to preserve the integrity of the berry. Delicately destemmed and left to macerate for a short period, it was then softly pressed, and the must thus obtained was clarified by decantation. This was followed by fermentation at a controlled temperature in stainless steel containers. At the end of fermentation, the wine was kept on the yeasts for a few months, to increase its complexity, creaminess and suitability for aging. Once bottled, it rests in temperature-controlled rooms for refinement.
