Vigna Rive Alte Exposure East Variety : Glera and old native varieties Soil: Calcareous conglomerates, bands of marl and siltstones Harvest : Manual harvest using small boxes of 20 kg Vinification : Soft pressing with separation of the must. Static settling of 18-24 hours. Fermentation in steel tanks with a pied de cuvée produced from our grapes. Maturation in steel / cement tanks with batonnage. Second fermentation: Second fermentation with the Martinotti method, in an autoclave for about 40 days using selected yeasts.
