TYPE OF SOIL The soil is formed by a high percentage of clay and, characteristic of this higher area, by a rich presence of stones.
VINIFICATION The grapes are harvested manually before they reach an advanced ripeness. Once in the cellar, they undergo a soft pressing, the subsequent alcoholic fermentation is carried out at a low temperature by selected yeasts; generally malolactic fermentation is not carried out. In the winter months the wine is refined in contact with the fine lees (battonage) until January / February in steel tanks; in the months of March / April it is bottled and, after one or two months of bottle aging, it is put on sale.
COLOR Pale straw yellow with greenish reflections.
BOUQUET the scent is delicate, in some stages austere as characteristic of the grape variety of origin. Typical hints of citrus, apple, hay prevail.
WINE PAIRING Fish appetizers, White meats, Fresh cheeses, Steamed fish-shellfish, Finger Food, Eggs and quiches.
TASTE The taste is very balanced, fresh and easy to drink.
NOTES Lugana San Vigilio is obtained from the vinification of Turbiana (or Trebbiano di Soave) grapes, a vine of ancient native origin of this area. The manual harvest takes place in advance of the full ripeness of the grapes and fermentation takes place in steel containers. The resulting wine is fresh and fragrant, slightly mineral.
